For this purpose, consider buying an old Dell server with 24 vCPU, 128GB of RAM and 2TB of storage and deploying EVE-NG as a bare-metal installation. You can get old servers for a fraction of the price without worrying about old technology. Older Intel generations or DDR technology like DDR3 will work perfectly for this use case.
